Salads

Alfalfa can be sprouted only in a jar. With its very mellow taste, alfalfa may be mixed in any proportion with romaine lettuce, green, chineese, savory cabbage, spinach and kale. Add sauce or dressing only when ready to serve to avoid soaking and softening it.

Sprouted radish in a jar tastes stronger, therefore it is mixed in smaller quantities. Its young growths on soil are magnificient and delicious. They may be laid out to decorate hors-d'oeuvres plates.

Sprouted lentils in a jar are astonishingly tasty and nutritive. They may be consumed without being cooked soon as they are 5mm (1/8 inches) long. They may grow up to 70mm (2 inches). As they are rich in proteins, they should be scattered in salads.

Chick peas sprout in 3 days. They cook in one hour. Half a cup by person may be mixed with a salad. If not cooked, there should be less, as they are harder to digest.

Mustard and fenugreek add spicy taste.

Hulled sunflower sprouts in jars. Soaked for eight hours, rinsed and sprinkled on a salad, it enriches with proteins. With its shell, cultivated in young growths, sunflower has an almond like taste. In juice, it makes a good combination with carrots. They should be cut down near the soil soon as the second leaves appear and they must be kept in refrigerator.

Whole buckwheat grows in trays for weeks. It will reach 30 cm (12 inches) long and will fall out the tray. It should be eaten freshly cut. With its very mellow taste, it may be used with anything.

Juices

Sprouts, young growths and vegetable juices are obtained by extraction (separation of pulp and juice) or by liquefaction of the whole aliment. Powerfully blended with an equal amount of water, we get a full-flavored thicker and more nutritive juice. Carrots, tomatoes, celeries, beets, all pepers, parsly, spinach, basil leaves, cucumbers, saurkraut, etc. may all be liquefied with their pulp.

Buckwheat and sunflower young growths bring a rich contribution of nutriments, chlorophyll and proteins. They may also be combined with carrots, celeries or cucumbers.
